Start your day with this high-energy plant-based snack bar by Food Impromptu. Not only is it good, but it8217;s healthy too! What I love most about this recipe is that it doesn8217;t involve baking. You have to try this – it is way better than the ones from the store. It8217;s natural and doesn8217;t have any processed ingredients.
- 1 cup of almond
- 1 cup of walnuts
- 1 cup of pumpkin seeds
- 1/2 cup of Goji berry
- 2 heaping cups of pitted soft dates
- 1 cup of smooth almond butter or nut butter of choice
- 1/2 teaspoon of salt
- 1/2 tablespoon of ground cinnamon or to taste
Get a pan and place it over medium heat. Add the almonds and toast for about 2 minutes. Next, add the walnut and pumpkin seeds. Toast them for about 2 minutes more. Once toasted, immediately remove from heat and transfer to a heat-proof plate. Set aside and allow it to cool completely.
Add the dates and almond butter to your food processor and blend it well. Next, add the toasted nuts, goji berries, ground cinnamon, and salt. Blend it into a course mixture.
Grease a pan by brushing the sides and bottom with oil, then line it with parchment paper. Transfer the mixture to your prepared pan and press it into the bottom with a spoon. Be sure to press it firmly, especially the corners to prevent air gaps and crumbling while cutting. Smoothen the surface well.
Cover it with plastic wrap and place it in the refrigerator for about 2 to 3 hours to allow it to set. Once set, remove it from the pan and slice it into your desired shape using a sharp knife. Be sure to clean the knife with a paper towel in between cuts.
After cutting them, wrap them individually in plastic wrap or parchment paper and store them in your refrigerator. You can store them in the fridge for about 3 to 4 weeks.
