Easy Cloverleaf Rolls Recipe

Ingredients:

  • 3 tbsp very warm water (110 F – 115 F)
  • 2 & 1/4 tsp or 1 packet of active dry yeast
  • 1 cup low-fat milk, warm (105 F – 110 F)
  • 5 tbsp unsalted butter, melted or very soft
  • 3 tbsp granulated sugar
  • 1 large egg, room temperature
  • 1 tsp salt
  • 3 & 1/2 cups of bread flour, divided

Topping:

  • 2 tbsp butter, melted
  • 1 tsp kosher salt

Directions:

Step 1

In the bowl of your stand mixer, add 3 tbsp of very warm water and 2 & 1/2 tsp or 1 packet of active dry yeast. Whisk together and let it sit uncovered for seven minutes or until the yeast is foamy on top. Next, add 1 cup of warm low-fat milk followed by 5 tbsp of very soft butter, 1 large egg, 3 tbsp of granulated sugar, and 1 tsp of salt. Whisk all together until well blended, then gradually whisk in the first 2 cups of flour. Once that’s incorporated, switch to the dough hook attachment, and add the remaining 1 & 1/2 cups of flour, adding it in thirds and letting it incorporate with each addition. Continue mixing the dough in the stand mixer for 10 minutes. When the dough is ready, transfer it to a large greased bowl and coat it with oil. Cover the bowl with plastic wrap and let the dough rise in a warm room for about 1 & 1/2 hours or until the dough is doubled in volume. Next, grease your standard 12-count muffin tin and set it aside.

Step 2

Now, transfer your dough to your work surface. Pat the dough into a rectangular shape and divide it into 12 even pieces. When you’re done, cut each piece of dough into thirds one more time. Cup your hand over each of the small pieces and roll over your work surface to form a ball. Once you’re mini balls are formed, place three pieces into one muffin cup, and repeat with the remaining dough until you have all 12 muffin cups filled. Oil a piece of plastic wrap and place the oiled side loosely over the rolls. Let it rise in a warm place for about 30 to 45 minutes. Meanwhile, preheat the oven to 425 degrees F. Once the rolls have risen, brush the tops with some melted butter, then bake in the preheated oven at 425 degrees F for 13 to 15 minutes. After baking, brush them with some more melted butter and sprinkle them with salt.
