Ingredients:
- 3 medium potatoes
- salt
- 1 tbsp butter
- 1 onion, diced
- 1/2 tbsp chili powder
- 1/2 tbsp curry powder
- 2 tbsp water
- pepper
- 1 cup mozzarella cheese
- 6″ tortilla wrap
- chili sauce
- pizza sauce
- green onions
Directions:
Step 1
Peel your three potatoes and add them to a pot of water. Season with a little salt, then bring up to a boil and cook until they are tender (about 20 minutes.) After they are cooked, drain the water and set them aside for later. Next, in a new pot, melt 1 tbsp of butter, then add one finely diced onion. Cook until fragrant. Season with a pinch of salt and continue cooking the onion until translucent. Now to build up the flavor, add 1/2 tbsp chili powder, 1/2 tbsp curry powder, and 2 tbsp water. Mix everything well, then set aside to cool slightly. Back to the potatoes, mash them first with a fork or potato masher, then season with a few pinches of salt and pepper. Add the onion mixture and mix until well combined. Add 1/2 cup of shredded mozzarella cheese and continue mixing.
Step 2
Warm up a 6″ tortilla wrap, then spread a thin layer of chili sauce over the surface. Scoop a spoonful of tomato pizza sauce and spread evenly. Next, sprinkle a handful of shredded mozzarella cheese over half of the tortilla, then scoop about 2 tbsp of the potato filling and carefully spread it out. Sprinkle some chopped green onions for a hint of freshness followed by another handful of shredded mozzarella cheese. After this, gently fold the tortilla in half, then place it in a buttered skillet over medium heat. Cook it for three minutes, then flip and cook for another couple of minutes.
