- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 & 1/2 cups 2% milk (or any milk available)
- 1 large egg
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- 3 cups chopped baby spinach
- 1 cup shredded sharp cheddar cheese
- 5 slices turkey bacon, cooked and chopped
- 1/4 cup chopped fresh chives
In a bowl, add 2 cups of all-purpose flour followed by 1 tbsp baking powder, 1/2 tsp salt, and 1/4 tsp ground black pepper. Mix well and set aside. Next, in another bowl, add 1 & 1/2 cups of 2% milk, 1 egg, 1/4 cup of plain yogurt, and 1/4 cup of olive oil. Mix well, then add the flour mixture. Mix everything well to combine.
Once the base batter is ready, start adding the fresh spinach, shredded cheddar cheese, chopped bacon, and chives. Fold all together well until the ingredients are incorporated. Next, line your 12-cup muffin tin with parchment paper liners, then scoop the mixture using an ice scoop to fill each of the muffin cups. Pop it in the oven at 375 degrees F and bake for 20 to 25 minutes.
