- 600 grams or 1.3 pounds of potatoes
- 2 tablespoons of corn flour
- 2 tablespoons of butter
- 2 tablespoons of minced garlic
- Salt, for boiling
- Oil, for frying
Peel off the skin of each potato, then slice them into equal thick strips and transfer to a large bowl filled with water. Give the potatoes a light massage and wash them well, then drain, and transfer to a pot filled with clean water. Sprinkle some salt on the potatoes, then bring it to a boil for about 2 minutes, one done boiling, transfer the potatoes to a bowl with water, and let them soak to cool down. Drain the water from the bowl, then transfer the potatoes to a baking sheet lined with paper towels, and pat them dry until there is no more moisture on them. Once dry, transfer the potatoes to a plastic bag, then sprinkle the cornstarch or corn flour, let some air inside the bag before twisting it close, and give it a good shake until all of the potatoes are well coated.
Heat up the oil in a pot, then deep fry the potatoes in batches to not overcrowd the pot, and let them cook for about 15 minutes. After the first fry and cooling down for a bit, fry them again for about 5 more minutes for extra crispiness. Now, prepare the garlic butter sauce, simply melt the butter in a pan, then add the minced garlic, stir well, and let cook for a few minutes or until fragrant. Add the fried potatoes, then give them a good toss until well coated, and transfer to a serving plate. You can garnish them with some freshly chopped parsley, then serve them together with your favorite dipping sauce, and enjoy!
